I’m going to be upfront here – I have no personal sous vide experience. I’ve just heard a lot about it (and saw a sous vide pitch on Shark Tank). But it really is the hip new way of cooking. Here is what it means:
Sous vide is a simple technique in which food is cooked in precisely controlled, low-temperature water. Because the food can never get hotter than the water, under- or overcooking is almost impossible.
